From the south West Languedoc near Limoux. The cool climate due to high altitude create ideal conditions for crafting a fresh & aromatic Sauvignon. Cold maceration on the skins, followed by pressing and alcoholic fermentation on the fine lees at a temperature of 16-18°C. A wonderful choice with herb-driven sauces over chicken, tofu, or fish dishes. matched with feta or chèvre, or paired with herb-driven asian flavors such as Thai or Vietnamese cuisine.
